Wes Allison was raised in the Gulf Coast confluence of Southern, Tex-Mex & Cajun cuisines. After transitioning to a vegan diet, he was naturally drawn to re-creating the comfort foods of his youth. He began his stint in the food service industry after moving to Austin, Texas, in 2009. He continues to get a kick out of cooking unconventionally for friends and for the Maximum Salad Youtube channel.
